Delicious Indian Coconut Curry

Easy and quick

Ingredients for the chicken curry:

2 tbsp avocado oil

3 chicken breasts - cut into bite-size chunks

1 large onion - peeled and finely chopped

2 cloves fresh garlic - minced

2 tsp minced fresh ginger

2 tbsp mild curry powder

1 tbsp ground coriander

½ tbsp ground cumin

1 tsp paprika

½ tsp ground graham masala(preferred) or cinnamon

1/4 tsp. Cheyenne or any chili flakes (more if you like it spicy)

1/2 tsp salt

½ tsp black pepper

1/2 tsp sugar

14 oz can finely chopped tomatoes or fresh tomatoes diced

1 cup chicken stock

14 oz can full fat coconut 

Frozen veggies - throw in 1 cup of whatever you have


To Serve:

Jasmine rice

Fresh cilantro chopped

Garlic yogurt sauce


How to: 

Heat oil in pan

Add cubed chicken

Add onion

Add minced ginger and garlic

Add spices

Cook until fragrant

Add rest of ingredients in same pot


Bring to boil, then simmer for 15 mins.

Add chopped cilantro ( including stems) in pot last 3-5 min of cooking

I serve with instant pot rice and garlic yogurt
